Does anyone know how to get to this screw that holds the exhaust tube to the swivel bracket on an omc rd series/ big twin?

You could use an offset screwdriver to remove the motor mount screw but that would likely be hard to do.   I typically just use a screwdriver or small bar to pry the swivel bracket off the motor mount.  Just be careful not to break the rubber mount.

Don’t know how far down you have it torn apart. But removing the nuts from the upper side mounts and one from the upper front mount and then the lower clamshell mounts will allow lifting the whole motor out and up and away from the swivel bracket.

While I’ve got it torn apart I would like to take out all of the old grease and get new grease in the steering tube. What grease would you recommend for new grease? Triple guard grease?

Triple Guard would certainly work.   I typically have used Lucas marine grease just because it’s easier for me to find locally, especially since my local Evinrude dealer decided to quit servicing Evinrude motors and quit stocking BRP parts and supplies.
